When it is too hot for baking, then we no-bake ! This simple yet delightful cheesecake recipe is the perfect little desert to whip up in no time.
- 1 package 8 oz cream cheese – room temperature (don’t skimp and get the light kind.. go full fat !)
- 1 can of Eagle Brand
- 1 tea spoon vanilla
- 1/3 cup lemon juice (the kind you buy in a bottle)
- ½ can of cherry pie filling (or any other you’d prefer)
- 1 graham pie crust
Combine the first three ingredients until the mixture is nice and smooth then add the lemon juice. (I use a stand mixer) The lemon juice will thicken the mixture up for an absolutely scrumptious pie. Pour the mixture into the graham crust and add the cherry filling on top. Since I have half a can left over of the pie filling, I always make two pies and double the other ingredients. Put the pies in the fridge for them to set a few hours and go enjoy the rest of the day. It is as simple as that.
This no-bake recipe is quickly done and in the fridge for later, freeing up some valuable time to enjoy the day; AKA reading.
